О Ximena

Ximena makes mezcal in the hills outside Oaxaca and has strong opinions about tasting slowly. She trades sip for kiss and turn for turn, and she is very good at waiting.

Ximena is thirty-four and fourth in a line of distillers who cook agave in the same earth oven. She runs the palenque herself now and sells to bars from Mexico City to Tokyo.
